To uncover the secrets to Pancake Day success, JM Entertainment spoke with Chef Daniel Lewis, 38, from Cardiff, who has been cooking in restaurants across South Wales for over a decade. According to Chef Daniel, the perfect pancake batter is all about the right balance of ingredients and technique. The chef says pouring milk into the mix slowly and gradually can save your batter from becoming lumpy.

You should first sift the flour and salt into a large mixing bowl to remove lumps and ensure a smooth batter. Next, make a well in the centre and crack in the eggs, then begin whisking, gradually incorporating the flour.
Slowly add the milk, whisking continuously to create a smooth, pourable batter. The chef says this step is crucial to ensure your batter doesn’t turn out lumpy.
You should then whisk in the melted butter, which helps prevent sticking and gives the pancakes a rich flavour.
Then, you should let the batter rest for at least 30 minutes to allow the flour to absorb the liquid, resulting in softer, more pliable pancakes.
With this simple method, you can ensure your pancakes will taste better than ever.
If you want to make extra-light pancakes, replace half the milk with sparkling water—the bubbles will create an airy texture.
Remember to be creative with your toppings. You could opt for the classic lemon and sugar, maple syrup, or Nutella and banana, but if you’re feeling more adventurous, you could go for Bischoff and whipped cream.
