It is understood that their drinks were spiked at the cocktail bar on August 7.
One woman in her 20s is said to have become unwell at around 11.15pm, shortly after a man approached her.
Essex Police said he had put his arms around her and kissed her cheek, before she later became ill.
The force has now released an image of a man, dressed in a blue polo shirt, who they would like to speak to in wake of the disturbing incident.
It comes after a string of women had their drinks spiked in clubs across the UK as restrictions eased and nightclubs reopened.
A spokesman for Essex Police said: "We'd like to speak to him after a woman's drink was spiked in Brentwood High Street."
